The Testaccio market was born in the working-class district of the same name, next to the old slaughterhouse, and in 2012 moved to a new building constructed on its original site, where excavations brought to light a Roman horreum. Many stalls have stayed in the hands of the same family for generations. This is where the tradition of the quinto quarto was born, the popular cuisine that made use of the offal that no one else wanted.
